Baked apple






Today it's time to be really healthy, at least by my standards, which means baked apples ;p 
During my childhood we used to eat baked apples cooked straight from a fire, later we just 
put them into the oven... delicious both ways. So when I found a recipe for baked apples 
cooked in the oven with some fruit juice and a bit of butter I had to try it as quick as possible ;] .


Ingredients:

4 Bramley apples
lemon zest from one lemon
juice from one orange
1 table spoon Golden Syrup
25 g unsalted butter
6 tablespoons fruit juice
pinch of cinamon


Preheat oven to 180 degree. Wash apples, dry and with a knife cut out seeds, try not to go completely through the apple.



At 1/3 of the height of the apple, score apple horizontally. At the top, score vertically- it will help keep the shape during baking.


Squeeze orange for juice.


Add lemon zest...


...and Golden Syrup.


Fill apples with mixture.


Put bite-sized pieces of butter on top of apples. Inundate apples with any fruit juice. Put them into oven for about 45 minutes.


Take out golden apples from oven and eat when they are hot.


It' s especially good for cold winter evenings. Baked apples, blanket and a good book ;]

Faworki


Today is fat Thursday- in Poland we celebrate this day by eating lots of doughnuts or 'faworki'. It’s the last Thursday before great week- so in our tradition you’re allowed to eat lots. Anyway I don’t like doughnuts, so I made faworki. I made them quickly, because I had to go to work… aaa and this time my brother helped me with photos.


Igredients:

1 glass of flour
2 egg yolks
½ glass of sour cream
a pinch of salt
Oil to fry
Icing sugar




All ingredients knead to a consistent cake.


Put some flour on the side and roll cake really thin.


Cut it into rhombus and make a little hole in the middle of each.

It takes a bit of time to roll them all.


When they are ready- put them into a pan with hot oil.


Wait until they turn golden and put on plate with kitchen paper towel.



Sprinkle with icing sugar and crunch them ;p



Dobrze, że przynajmniej w jedne dzień w roku można obżerać się i nie mieć wyrzutów sumienia :P

Banana muffins with additions


Last time it was a bit calorific so today it’s time for a healthier style of sweets. Yesterday evening I baked muffins with the addition of bananas – because I haven't baked any muffins for such a long time. I also wanted to see how my new cupcakes stand looks ;] unfortunately I missed the opportunity to take photos of them yesterday- half of them disappeared in the blink of an eye, that’s why I’ve baked a new portion today.


Ingredients:

125 g unsalted butter at room temperature
160 g sugar
1 tablespoon maple syrup
2 bananas
1 egg
60 g any nuts, almonds or sunflower seeds
200 g  Flour
1 teaspoon baking soda
120 ml yoghurt
4 tablespoons sugar
Some sunflower seeds or almonds to decorate



Put butter into bowl, add sugar and maple syrup. Mix these together precisely.
.

In the mean time fry sunflower seeds in a frying pan- until they turn golden.


Then add egg and half of the yoghurt to the butter and mix.


Next add the flour, baking soda and the rest of yoghurt Add the yoghurt slowly, little by little. Then mix all of this together until it is smooth.


Chop bananas.


Add them to bowl and also the chosen nuts ;]


.Fill the baking tray and put into the hot oven. Bake for about 30 minutes at 180 degrees.



Put sugar and sunflower seeds into small pan. Stir and wait until the sugar turns into caramel.


Place the fried sunflower seeds on top of muffins- does this quickly as it turns solid rapidly.


Finally make some tea or coffee, call some friends and enjoy a good evening of gossip.

Double Cream in lead role


Last time i went a bit crazy with my shopping and bought too much double cream. So I decided to use it in a very sweet way and this time prepare something cold. A cake to evoke at least a bit of sunshine. In the mean time I have created a really quick cupcake- the recipe for them you can find here.



Ingredients


1 litre double cream
2 jelly
2 tablespoons gelatine
7 tablespoons icing sugar
Chosen fruits
Pack of digestive biscuits- I used ginger ones
2 tablespoons unsalted butter


Wash fruits and dry them. Mix gelatine with a bit of cold water, after few minutes melt it with hot water. Prepare one jelly- melt it in glass of hot water.



Break biscuit into small pieces and melt the butter.



Mix biscuit with butter and put on the bottom of pie pan. Put it into fridge.


 Take ½ litre of double cream. Warm a dash of it and combine with 5 tablespoons of icing sugar.


Mix double cream with sugar and gelatine. Transfer it to pan and add blueberry (or chosen fruits).



Whisk remaining double cream, add 2 tablespoons of icing sugar and jelly. Stir it gently. At the end add raspberry and transfer to pan.



Put the setting jelly on the top of the cake. It is best to leave cake for a whole night in fridge. :)
