Last time it was a bit calorific so today it’s time for a healthier style of sweets. Yesterday evening I baked muffins with the addition of bananas – because I haven't baked any muffins for such a long time. I also wanted to see how my new cupcakes stand looks ;] unfortunately I missed the opportunity to take photos of them yesterday- half of them disappeared in the blink of an eye, that’s why I’ve baked a new portion today.
Ingredients:
125 g unsalted butter at room temperature
160 g sugar
1 tablespoon maple syrup
2 bananas
1 egg
60 g any nuts, almonds or sunflower seeds
200 g Flour
1 teaspoon baking soda
120 ml yoghurt
4 tablespoons sugar
Some sunflower seeds or almonds to decorate
Put butter into bowl, add sugar and maple syrup. Mix these together precisely.

In the mean time fry sunflower seeds in a frying pan- until they turn golden.
Next add the flour, baking soda and the rest of yoghurt Add the yoghurt slowly, little by little. Then mix all of this together until it is smooth.
Chop bananas.
Add them to bowl and also the chosen nuts ;]
.Fill the baking tray and put into the hot oven. Bake for about 30 minutes at 180 degrees.
Put sugar and sunflower seeds into small pan. Stir and wait until the sugar turns into caramel.
Place the fried sunflower seeds on top of muffins- does this quickly as it turns solid rapidly.
Finally make some tea or coffee, call some friends and enjoy a good evening of gossip.
