Double Cream in lead role


Last time i went a bit crazy with my shopping and bought too much double cream. So I decided to use it in a very sweet way and this time prepare something cold. A cake to evoke at least a bit of sunshine. In the mean time I have created a really quick cupcake- the recipe for them you can find here.



Ingredients


1 litre double cream
2 jelly
2 tablespoons gelatine
7 tablespoons icing sugar
Chosen fruits
Pack of digestive biscuits- I used ginger ones
2 tablespoons unsalted butter


Wash fruits and dry them. Mix gelatine with a bit of cold water, after few minutes melt it with hot water. Prepare one jelly- melt it in glass of hot water.



Break biscuit into small pieces and melt the butter.



Mix biscuit with butter and put on the bottom of pie pan. Put it into fridge.


 Take ½ litre of double cream. Warm a dash of it and combine with 5 tablespoons of icing sugar.


Mix double cream with sugar and gelatine. Transfer it to pan and add blueberry (or chosen fruits).



Whisk remaining double cream, add 2 tablespoons of icing sugar and jelly. Stir it gently. At the end add raspberry and transfer to pan.



Put the setting jelly on the top of the cake. It is best to leave cake for a whole night in fridge. :)
